6 Filippijnse street foods die je niet voor mogelijk houdt

Pas in 1946 zijn de ruim 7000 eilanden waar de Filippijnen uit bestaat onafhankelijk geworden. Als gevolg van 300 jaar bezetting door de Spanjaarden (oorspronkelijk onder koning Filips, naar wie het land is vernoemd) en meteen daarna nog bijna een halve eeuw door de Amerikanen, heeft dit land een rijke historie met vele Westerse invloeden. Toch zie je op elke straathoek in de hoofdstad Manilla de meest bizarre street foods voorbij komen waar de 350 jaar lange Westerse bezetting geen invloed op lijkt te hebben gehad. Overigens zijn deze gerechten voor Westerlingen misschien bizar, voor de meeste Filipinos is het als een boterham met hagelslag. Wij zetten er een aantal op een rijtje.

1. Balut

Een van de meest karakteristieke snacks van de Filipijnen, het wordt overal verkocht: Balut. Het gaat hier om een twee-tot-drie weken ontwikkeld eenden embryo dat nog in het ei verborgen zit. De locals beweren dat je er sterker van wordt. Ze breken het ei gecontroleerd open en zuigen eerst het vocht eruit, waarna ze de substantie in een paar happen naar binnen werken. Ondanks dat het er voor ons Westerlingen nogal onsmakelijk uit kan zien vinden de meeste toeristen het een grote meevaller als ze het eenmaal hebben geprobeerd – there’s a first time for everything!

2. Isaw

Een typisch Filipijns gerecht, geroosterde kippen- of varkens ingewanden. De blaas, de darmen, het hart, allerlei inwendige attributen worden per soort op houten stokjes geregen en op smaak gebracht met barbecue saus of chili-azijn dressing.

3. One-day-old

Liefhebbers van schattige jonge diertjes zullen er geen groot fan van zijn. Het gaat hier namelijk om een kuikentje en – de naam zegt het eigenlijk al – deze is slechts één dag oud. Het beestje wordt in zijn geheel gefrituurd. De kop is volgens locals het meest smaakvol, maar ook de knapperige pootjes en de soms wat bittere ingewanden zijn voor veel Filipinos een welkom lunch hapje.

4. Adidas

Er is in de Filippijnen geen deel van de kip dat wordt weggegooid, behalve de veren misschien. Zelfs de klauwen van het beestje worden hier op de grill gegooid en het resultaat wordt (met een humoristische ondertoon) ‘Adidas’ genoemd. Het is als het eten van kippenhuid dat je gewend bent van een normale kippenpoot, alleen dan zonder kippenvlees eronder..

5. Helmet

Zoals gezegd, niets van de kip gaat verloren, zo ook niet de kop (de helm). Om de geroosterde kippenkop op de juiste manier te verorberen breekt men de schedel open en zuig de hersenen en andere lekkernijen eruit.

6. Walkman

Zoals je inmiddels hebt gemerkt houden Filipinos van catchy en makkelijk te onthouden benamingen voor hun street snacks. De ‘Walkman’ is een gegrild varkers oor. Heb je hem toch liever fijngehakt samen met de snuit, de lever en de wangen, probeer dan meteen even de meest populaire street food in de Filippijnen: ‘Sisig’.

In andere culturen kom je altijd wel dingen tegen die je niet zou verwachten, maar dat is juist het mooie en spannende van reizen en ontdekken. Van backpacken kun je natuurlijk het een en ander leren maar de echte ‘cultural experience’ krijg je pas als je gaat wonen tussen de locals en een band met ze opbouwt, al is het maar voor een paar weken. Door vrijwilligerswerk te doen in het buitenland kun je bijdragen aan de samenleving en tegelijkertijd jezelf onderdompelen in een vreemde cultuur die jou nieuwe perspectieven op het leven kan bieden.

My AIESEC volunteering project in Italy

In January 2020 I participated in an AIESEC Project on environment and sustainability in Castellana Grotte, Italy. I was lucky to stay six weeks in one of the most beautiful small villages I have been to. My work was about teaching the kids in the local Highschool on the UN SDGs and sustainability. My fellow AIESEC students were so kind to pick me up in Bari. They made sure I was safe and showed me how to travel to my destination.
